A Live 3-Part Series That Changes How You Understand Food

This is a three-part live masterclass series designed to be taken as a whole. Each session builds on the previous one moving from why we eat, to how digestion is regulated, to how to apply these principles to build your ideal diet in real life.

Rather than telling you what to eat, this series gives you a clear physiological framework for understanding hunger, digestion, energy, and food choices informed by yogic practices, breath-control, and modern science.

You can join individual sessions, but the full value emerges when you follow the entire progression.

PART 1 — FOUNDATION

The Hidden Drivers of Hunger

Why we eat (beyond nutrition) and why dieting often fails.

  • The 8 reasons we eat (nutrition is only one of them)
  • How to tell hunger vs need and what cravings are really signalling
  • Stress, digestion, blood sugar swings (hypoglycaemia) & appetite
  • Why willpower-based dieting breaks down (and what works instead)
PART 2 — REGULATION

Breath, pH & Appetite Regulation

The missing link between yoga and diet. Internal chemistry without woo.

  • Who really eats the food inside of you? Fermentation and putrefication explained.
  • CO₂ & acid–alkaline balance explained clearly and practically
  • Why correct breathing can reduce unnecessary hunger
  • How nervous system tone & muscular tension influence digestion
PART 3 — INTEGRATION

Build Your Ideal Diet

Food types, longevity markers, and practical integration.

  • Carbs, proteins, fats: what actually goes wrong in real bodies
  • Insulin, inflammation, energy crashes, and aging mechanisms
  • Cooking, processing, and AGEs (glycation) explained simply
  • How to build your ideal diet based on your lifestyle

Why This Series Exists?

This isn’t nutrition advice. It’s an understanding of how your body works.

Most diet education focuses on what to eat, what to avoid, and which philosophy to follow.
But the real question isn’t which diet is correct.
It's what conditions make food usable by the body.

In this series you'll learn the underlying principles of digestion mechanics, stress physiology, breath chemistry, and blood sugar regulation so your choices come from understanding rather than rules.

In this series you’ll learn:

  • The 8 main reasons we eat (and why “hunger” is often not hunger)

  • How stress shuts down digestion, leading to malnutrition and cravings

  • The link between breathing, intracellular pH, and appetite

  • Why “eat less” is the only consistently proven longevity diet and how to make it viable with yogic methods

The big idea

Diet trends come and go. Physiology doesn’t.

If you understand why you eat, you stop being quietly manipulated by cravings, stress, and misinformation and you can make choices that actually fit your body.

The questions most people never get clear answers to

Most “nutrition education” answers the wrong question. It tells you what to eat, but rarely explains why your body asks for what it asks for.

If you understand the mechanisms behind these, you stop being pushed around by diet trends because you can finally read your own body’s signals.

“How much protein do I actually need?”
We’ll unpack what “requirement” really means, why absorption matters as much as intake, and how stress + digestion state affects what you can actually assimilate.
“Why am I hungry even after I eat?”
You’ll learn the non-nutritional drivers of hunger: blood sugar swings, stress chemistry, fermentation/poor digestion, and why cravings often aren’t “needs”.
“Is fasting helpful or just stressful?”
We’ll look at the difference between appetite regulation and suppression, and how breath, nervous system tone, and lifestyle determine whether fasting is supportive.
“Why do I get bloated from ‘healthy’ food?”
“Healthy” doesn’t help if digestion is off. You’ll learn how stress shuts digestion down and why some foods ferment when the system isn’t ready.
“Why do I crave sugar at night?”
We’ll map cravings to mechanisms: hypoglycaemia, sleep debt, stress hormones, and how breathing patterns can shift the whole appetite loop.
“Do I need supplements?”
Instead of supplement panic, we’ll discuss digestion and absorption first — plus when supplementing is sensible and when it’s just treating symptoms.

“I eat whatever I like, whenever I like, however much I want.”

I’m Simon Borg-Olivier a yoga educator, physiotherapist, and molecular biologist. I’ve been educating on topic of Yogic Diet internationally for over 40 years. My approach is not moralistic and not dogmatic. It’s practical physiology.

I’ve personally lived on a very simple diet for decades, usually eating one main meal per day. Most evenings, what my body wants is simple fruit & vegetables. I’ve lived this way for decades, and I’ve felt consistently good not because of willpower, but because my body doesn’t ask for more.

And that’s the part most people don’t understand. My appetite is regulated by my lifestyle: how I practice posture, movement, breathing, and mental control changes stress, digestion, and energy demand so the body naturally asks for less.

This isn't me telling you what to eat, but to show you how the system works so you can choose intelligently.

“But I don't eat burgers and pizza. I eat this!”

Who's this for

If you’ve heard convincing arguments for completely different diets and realised they can’t all be right yet your own experience doesn’t fully match any of them.

If you don’t want another set of rules, but a clear explanation of what happens inside you after you eat: why appetite changes, why energy fluctuates, and why the same food can feel different on different days.

And if you want that explanation from someone who has spent decades testing these principles in his own body not just studying nutrition, but living it through breath, movement, and physiology.

What this series is NOT

  • Not meal plans or “eat this / avoid that” rules

  • Not food morality or identity diets

  • Not influencer nutrition or trend cycles

  • Not willpower-based restriction

  • Not weight-loss marketing

“I consider Simon a modern-day body mechanics wizard.”
When I saw Simon for my knee consultation, I could hardly walk. The meniscus tears in both of my knees created so much movement limitation. What I learned from Simon were simple, effective co-activation exercises that immediately gave me a significant increase in movement and a decrease in pain. I consider Simon a modern-day body mechanics wizard. For the last 20 years, Simon has taught me how to manage my internal processes in ways that give me the capacity to self-regulate and meet my energy management and vitality goals. Working with me to reconfigure my knee damage took it to the next level. The surgery I was required to get was no longer required.

"I was in a car accident a few years ago that shattered my right shoulder and I had to wear a neck brace for month. Recovery was slow, I still have to be careful with what I do and how I do it, especially now that I am in my fifties. ... Sadly, I cannot do too intense a yoga practice any more. I started doing his Joint Synergy Program that not only helps my aching joints but it also makes me feel stronger while improving my poor circulation. Thank you, Simon!"

Stacey, 53, Sydney

"I have been doing Yoga Synergy for quite a few years, but Simon’s classes and workshop are always so jam-packed with valuable info that it always takes month to digest all the theory and apply it to my practice. And because Simon himself is continually evolving his practice and teachings, there’s always a lot that I still don’t understand, but this Joint Synergy program clarified so many thing for me that I feel I am doing his yoga sequences much more efficiently because of the understanding this course gave me."

Leo, 42, Spain

"I used to be a gymnast and dancer before I came to yoga. My first yoga class was with Simon in Tel Aviv, and I have never experienced a movement system like his. I have been suffering from back pain for 5 years, but his circular movements don’t just make me feel stronger without feeling stressed out, but made it much easier to do any other movement system and use the Joint Synergy principles in any type of exercise."

Tal, 34, Israel

"The Joint synergy sequences get me in the zone, I become warmed up and energised and it makes so much easier to do my high-intensity exercise regime."

Andrea, 32, UK
